the etymology for zest according to the online dictionary :

Origin:
1665-75; F zest (now zeste ) orange or lemon peel used for flavoring.

I tend to think zest comes from zeest زيست in Farsi (carried over to Urdu as well) meaning ‘life’ or ‘subsistence.’  Will the phrase zest for life, then become ‘life for life’?

ishq se tabi’at ney zist kaa mazaa paayaa
dard ki dawa paayi, dard e bey-dawa paayaa

in love, the soul has found the zest for life
and found a cure: a pain that has no cure.
